A brightly colored rainbow cake is a good choice for birthdays, holidays or any time you want something sweet to celebrate with. There are several ways to achieve a rainbow effect, either on the inside or outside of a cake. Some take a little work, but the results are worth it.

  1. Colored Icing

    • One way to decorate a rainbow cake is to tint icing in different colors and pipe it onto the cake. Start by frosting the cake with a light-colored base coat. White or a light blue are good choices. Put 1/4 cup of white icing into plastic sandwich baggies, one per color. Drop food coloring into the bags and mix into the icing by kneading. When the icing has reached the color intensity you desire, use scissors to snip off one corner of the baggies and pipe rainbow stripes over the base coat.

    Colored Sugar or Coconut

    • Coloring sugar or coconut in rainbow colors is another idea. Put 1/2 cup of sugar or dried coconut flakes into a bowl for each color you want. Add a few drops of food coloring and use a spoon to stir it into the sugar or coconut. Continue, adding more coloring until you have the color intensity you desire. Frost the cake with a light-colored base coat and press the sugar or coconut into it before the frosting has time to dry.

    Rainbow Candies

    • Many different types of candies come in a rainbow of colors. Buy these candies and separate them into bowls by color. This will become the basis of your rainbow. Frost the cake with a light-colored base and press the candies into the frosting before it dries. You may need to work on the cake in sections, as the candies need to be placed individually if they are larger. Small candies, such as sprinkles or jimmies, may be pressed into the cake like the sugar or coconut option.

    Gelatin Poke Cake

    • To turn the cake itself into a rainbow surprise when it's cut, make a gelatin poke cake. Start by baking two layers of white cake and allowing to cool completely. Set each on a platter or other flat surface. Use a wooden skewer to poke holes 1/2 to 2/3 of the way through the cake. Make the holes varying depths. Mix two to four different flavored 3-oz. packages of gelatin desert with 1 cup of boiling water each. Stir until the powdered gelatin is dissolved. Carefully pour the different colors of gelatin over the cake and refrigerate for four hours, or until the gelatin is set. Decorate as a double-layer cake with frosting. The gelatin soaks into the holes and when the cake is cut the colored spikes will be visible.
