Many brides want their wedding to special, the one day you want people to remember the things that made it uniquely yours. One way you can achieve this is by choosing a unique wedding cake flavor or flavors. Many people stick with basic vanilla or chocolate sponge cake, but there are many other flavors from which to choose. You can even branch out further and choose a different flavor per layer.

    • Carrot cake is a good choice for those who want to try something new but don't want to be too adventurous. Many people know and like carrot cake, so it won't be too far from the norm for your guests. Carrot cake, which usually has carrot string, raisins and nuts, is heartier than most wedding cakes. It usually comes with a thick cream cheese or buttercream frosting, which would go well in a typical tiered wedding cake format. If you want to branch out further, try a white chocolate icing.

    No Bake Chocolate Biscuit Cake

This recipe has just four ingredients--butter, chocolate, chopped nuts and your favorite crunchy biscuit, graham cracker or cookie. Melt the chocolate and butter, mix all ingredients together, press them into a round pan and chill. The butter and chocolate will hold the cake's shape. This cake is ideal for chocolate lovers who want something a little bit different--the biscuits or cookies add a crunch that's different than most chocolate cakes. If possible, bake a test cake to see if this works for you.

    Ice Cream Cake

    • A childhood favorite for many, ice cream cakes are becoming increasingly popular as wedding cakes. Ice cream cakes usually come with one layer of ice cream on top of a layer of cake. First choose your favorite ice cream flavors and your favorite cake flavors and see which ones would complement each other best. For example, chocolate chip mint ice cream goes well with a chocolate mousse cake. Or, choose a fruitier combination, like lemon cake with strawberry or fruit sherbert.

    • If you want a lighter wedding cake, try Lemon Poppy Seed. This is a basic lemon cake with poppy seeds added to the mix. It's usually topped off with an icing rather than a frosting, so it won't look the same as a typical wedding cake with white frosting. If you want the typical wedding cake look with lemon poppyseed cake, you could use a thick buttercream frosting. You could add to this cake by inserting a layer of fresh raspberry filling. This will add depth to the cake while still keeping it light.
