Cakes have been eaten for centuries and within many cultures. Though there are many variants of these baked treats, a tender, flavorful slice is the ultimate goal for any cake baker- however, trying to create the perfect moist batter often results in runny and undercooked cake. With a few simple tricks, and the right balance of ingredients, perfect cake can be created that will wow anyone served a slice. These practices can be applied to almost any kind of cake.

Things You'll Need

  • Cake recipe
  • Measuring cups and/or spoons
  • 2 tsp. meringue powder
  • Small baking pan

Instructions

      Cream the butter and sugar for at least five minutes. Add one minute on to the time called for in the directions to make the batter more smooth and tender. Ensure the butter and sugar are mixed thoroughly before proceeding to the next step in the recipe.

      Add the meringue powder to the dry cake ingredients before they are sieved together. This will result in a more tender slice of cake.

      Mix one teaspoon vinegar with the baking soda before adding it to the wet ingredients if baking a chocolate cake.

      Substitute half of the oil called for in a recipe with the same amount of applesauce, full-fat yogurt or mayonnaise. This will retain moisture in the dough better than oil.

      Add one teaspoon more of oil or butter than what is called for in the recipe.

      Bring eggs to room temperature before adding them or beating them into a cake.

      Replace egg whites with egg yolks in the recipe. Egg whites tend to dry out the cooked batter while egg yolks retain moisture.

      Place a small pan full of water in the oven while baking the cake.

      Keep a close eye on the cake five minutes before it is supposed to be finished cooking. Continually test it during this time with a toothpick. If it's done, when the toothpick is inserted it should come out clean.

Tips &- Warnings

  • To keep moisture in the cake after baking or when storing, cover with airtight plastic Wrap or store in an airtight container.
